Buche de Noel is THE ultimate holiday dessert!
I made my first Buche de Noel in 2021, and it has become a beloved Seabird staple every holiday season since. This year, I would love to share the process with you, and help you create the dessert centerpiece of your dreams. Buche de Noel are a rolled sponge cake, typically filled with cream or custard, wrapped in silky buttercream, and glazed with ganache. A signature of Buche is the meringue mushrooms, which are so cute and fun to make!
For ease of time, I will bake off sponge cakes beforehand, but will demonstrate the process during the class. We will make a filling, buttercream, ganache, and meringue mushrooms, and then decorate with a variety of edible and ornamental garnishes.
Tickets are $115 and include wine, tea, and snacks, plus you’ll bring home your own cake! Cakes freeze beautifully, so this is a great opportunity to make a cake during the workshop and freeze until your holiday celebration. These cakes typically yield 12-14 slices of cake.
